Baked Buffalo Chicken FriesServings:

Ingredients:
1
pound of boneless skinless chicken breast
3
large white potatoes
2 cups
of cheddar cheese
1 cup
of Panko bread crumbs
1 cup
of hot sauce or wing sauce of your choice
2 eggs
1/2
cup of flour
1/2
cup of banana peppers divided for each serving
Cajun
Seasoning
1
teaspoon of Cayenne Pepper
1/4
cup of olive oil
1
tablespoon of water
Salt
and Pepper
Tools:
Two baking sheets, 3 dishes for breading station, big mixing bowl and oven.
Directions:
1. Preheat oven to 450 degrees.
2. Set up breading station, each ingredient in a separate dish(in order): First station with flour salt, pepper, and Cajun seasoning. Second station with two eggs and tablespoon of water and mix until well combined. Third station with Panko bread crumbs, Cajun seasoning, and cayenne pepper.
3. Cut chicken breasts into strips (around 4-6 strips per breast) and place in a bowl.
4. Cut potatoes lengthwise into three sections then cut each section into sticks to resemble fries.
5. Spray baking sheet with cooking spray and place fries on baking sheet in a single layer and toss with olive oil, salt and pepper, and Cajun seasoning and place baking sheet into oven for 20-25 minutes, turning fries halfway during cooking time.
6. Spray second baking sheet with cooking spray. Take chicken strips (2-3 strips at a time) place in flour until fully coated, then place in egg wash until fully coated, then place in Panko bread crumbs until fully coated, finally place on baking sheet. Repeat steps until all chicken strips are breaded.
7. Place chicken strips into oven for 10-12 minutes, turning half way so that each gets crispy.
8. Take chicken strips out of oven and place into mixing bowl and toss with hot sauce until fully coated. Also take fries out of the oven.
9. Place chicken strips on plate, place fries on top of chicken strips, place banana peppers on top fries, and top with cheese.
10. Turn oven to broil, and place plate under broiler until cheese is melted (1-2 minutes). Note: Make sure to keep an eye on the food while under the broiler because it can burn quickly.
