Kolleh in The Kitchen


Pan Seared Salmon, Lemon-Garlic Pasta, and Shrimp Scampi Cream Sauce


First things first a gal like me wasn't bred in the kitchen. So lately I've been trying to learn how to cook beyond the basics. Do not try to play me I can do more than boil water, but now that I'm older I really want to learn how to make more than just than  Chicken and Shrimp Alfredo or loaded nachos. My good friend Suge is an amazing cook and has been trying to get me to expand my cooking horizons since I slipped up and told him I occasionally indulge in a bowl of beefaroni (side eye) So without further ado here's how I recreated the dish above.




Recipe

Ingredients:
2 Salmon Filets
1 pound of Shrimp
3 teaspoons of minced garlic
Half box of linguine
1 pint of heavy whipping cream
Half cup of white wine
Juice and zest of 1 lemon
8 tablespoons of olive oil 
2 tablespoon of Italian seasoning 
1 pinch of crushed red pepper flakes
1 tablespoon of dried parsley for garnish. 
Salt and Pepper 

 My sister and I make weekly shopping trips and this week we wandered around the grocery store looking for all the items included in the recipe. Please note that Dee must of gotten a tad bit thirsty because she DRANK some of our white wine we planned to use to cook. 


Meal Prep

The meal prep was really easy which surprised me. I did deviate from the original recipe by adding more Italian seasoning and cayenne pepper to the shrimp. Blame it on the coon in me.

Cheffing it Up


I did get a tad bit distracted when Dee came home so I admit I let the Salmon cook for a lil too long but it was still tender and moist so that's all that matters.

Dinner is Served


So here is my final product. Literally this was the best meal I have ever made. Chef Kev said that my plating needs work but it's not my fault I love sauce. LOL 


Try it at Home

This recipe is great for a mother's day meal or for that one special person in your life. Make sure you tag #LifeStyleOlogy when you chef it up in the Kitchen
1. Preheat oven to 350 degrees and heat up a pot of water until it starts boiling.
2. Place shrimp in a bowl and combine with two tablespoons of olive oil, 1 teaspoon of minced garlic, 1 teaspoon of Italian seasoning, and pinch of crushed red pepper flakes, salt and pepper. Stir everything together and place to the side to marinate.
3. Add 1 tablespoon of salt to boiling water then add pasta and boil for 9 minutes.
4. Heat pan and add 3 tablespoons of olive oil to the pan. Season salmon on both sides and add salmon to pan and cook for 2-3 minutes on each side. Then add pan to oven and leave in for 9 minutes, flipping halfway. After 9 minutes, take pan out of oven and place salmon on a plate to rest.
5. Heat another pan and the remaining olive oil, add garlic and cook for 1 minute, then add shrimp and lemon juice and cook for 3-4 minutes. Pour in white wine to deglaze pan and cream and cook until reduce by half.
6. Drain pasta and add back to pan with olive oil, remaining garlic, and lemon zest for 1-2 minutes.
7. Place pasta on plate, top with salmon, and pour shrimp sauce over salmon. Garnish with parsley.
